    Get a good diamond honing steel & Cozzini Ergo steel sharpener. Way better than those crap ceramic rod.

    it don’t matter either way, it’s screened on, just a mere silkscreen graphic. Prices usually go for around that, but for the sharp eyed, they can be had for less.

    Good to know–farther up you say definitely DO get the Shun because of the angle.

    So–recommendations on a ceramic or glass rod? The Shuns arrived the other day and I haven’t started using them yet. Want to keep them as perfect as possible so I’ll get the rod first and have it ready–

    DO NOT GET THE SHUN HONING STEEL!!!! it will shred your blade into micro serations and mess up your edge. I recommend getting either a ceramic honing rod or a glass honing rod. Shun is making big bux off their defective honing rods. I ruined my first two Shuns by using it, but luckily wiliam sonoma gave me free replacements.

    Where the heck are they selling the chef’s knife for $99? I just paid $80 something on sale for a 6″ chef’s and $44 for a paring (Shun classic). Now I need the honing steel.

    If you can… get your self a very fine ceramic honing rod, it’ll keep the mirror polish edge on your shun razor sharp and do a MUCH better job than grooved steel. They cost about 20 dollars. Cheers!!!

    Can anyone PLEASE tell me the name of the song and the artist of the second song playing on this video (”Well, so long good friends, when will we meet again?”, etc)? Am a big Shun fan, have two; a 4.5″ paring knife and an 8″ Santoku chefs, plus the honing steel. Love everything about them, felt like a glove as soon as they hit my hand. If you’re considering getting one, be aware that they are ‘handed’; you need to specify if you’re right- or left-handed.

    I’m not too sure of Misonos decision on using Swedish Stainless rather than their own Stainless. My guess is that the mineral composition of the raw materials that are combined to make the blades are superior in certain regions of Sweden. Or it could be that Misono found a point of diminishing returns and decided to choose a steel that was both capable and cost effective. Keep in mind the Misono isn’t a “spare no expense knife” but it’s still quite amazing for the money. Good move I think.

    The heaviness has nothing to do with the blade part, it’s the handle makes this knife heavier. so it’s not good 50/50 balanceable one.
    But it’s more useful than light weigh sharp knives to use on cutting hard food like a pumpkin, watermelon stuff.
    heavy handle does the job for more easy cut with less strength.

    I got GLOBAL G-2 Knife which they say it is only 172g Light
    yes it’s very light cause G series knives have stamped blades
    GLOBAL GF series knives have forged blades (heated and hammered) GF series are more robust and heavier than G series, however both series have had same bladings, so you could feel the same sharpness.
