Shun. What more needs to be said??? It is simple, Shun is the best all around. Will you pay more? Sure you will but you will never have to buy a replacement in your lifetime. Shun knives are the best in the world, no question.

I am a professional chef in Seattle and have always used Henkles, wustoff etc. Although they are VERY GOOD knives, the shun takes it to another level…If you buy them, BE CAREFUL taking it out of the box. I knicked myself just taking it out of the box..BTW being this sharp is a good thing a very good thing. It is also keeping its edge and on the occaision I have to steel it, just a few passes on the steel and it is good as new.

I ordered the Ken Onion 8″ Chef’s Knife from BB&B last week (with coupon of course) and it has yet to arrive. While shopping at TJ Maxx for some new bamboo cutting boards to prepare for the arrival of my new baby I happened upon a reasonably large selection of Shun Classics including this little beauty for $40. I spent about an hour walking around my kitchen looking for things to cut and comparing it to my now-retired Henckels. The difference in the blades is astonishing! This knife is unbelievably precise and comfortable to use. Now I am worried that the Ken Onion which I ordered won’t be as comfortable as the Shun Classic. For those who are concerned about the price please remember that Shun will sharpen your knives to factory specifications for the life of the cutlery. Break the $60 price down over 10 (or 20…0r 40?) years and it will seem like an absolute bargain to have some of the finest kitchen steel that money can buy.
