    Very sharp and convenient knife.

    Two points to be made though:

    1. Near the handle the work side of the blade ends with rather sharp point which is almost hooked (see the picture) towards the handle. If you hold the knife incorrectly or just not being careful enough, you can easily prick your finger with this part of blade.

    2. As the knife gets duller (and it does), it is not obvious what to use as a honing/sharpening tool. Every sharpening steel I tried is softer than the steel used in the blade and has no effect. I also tried Kyocera ceramic steel, but that leaves scratches (even when the honing side is used) on the polished part of the blade.

  2. My favorite knife for small, quick prep for moderate amounts of chopping, slicing and general use. Yes, it works great as a boning knife, but the blade shape has made it my favorite for it’s versatility. I usually am just cooking for two and don’t need one of my larger knives with this in my hand.

    I can not say enough about the quality of the Elite line. The steel is the finest I have seen for kitchen use. Durable and insanely hard at 66 on the Rockwell scale and equipped with the best edge I have seen so far.

    Feather light in the hand with a perfectly shaped, lightly ergonomical shaped handle in which the steel continues through to the butt of the handle bringing the balance slightly to the rear, making this little kitchen razor wicked quick and efficient on everything but larger chopping chores better suited to one of my santoku or chef’s knives.

    Having just returned from the Kershaw USA headquarters in Tualatin, OR, I can tell you the service was the best I have ever had on a warranty issue.

    A well used set of their 7700 series (beautiful, light and a work of art to look at)was exhanged for some Elite’s and this little honesuki was one of them.

    I have owned Global, Henckels,MAC, Wustoff, Cutco (overrated junk) and many others. The Shun knives, all of them, are all around the best thing going for the home chef. The service is unbeatable directly from them, the fit and finish the best I have seen on production knives and the cutting qualities of the blades second to none.

    If you are into knives, really appreciate the new high end, cutlery steels on the market and want an agile little knife for general use and boning tasks, I can not reccomend this knife enough.

    You will fall in love with this little guy.
