    This is a great knife. I’ve used it for a few months now. It’s great for prepping smaller sized foods or detailing larger things. It holds it’s edge and sharpens well.

    Good balance. Every chef should have this 4″ one in their knife inventory!!

    For several years, I had the pleasure of using a Calphalon branded 10″ Chef knife. Even though many people consider the 8″ version to be the ultimate in utility (I own that length as well), I found the 10″ to offer much more utility overall, with no negative issues to regret later. Even though I have a fairly extensive collection of well used kitchen cutlery representing many brands, the 10″ Chef knife has been my primary choice for all around prep knife for years.

    Several months ago, I was introduced to my new neighbor, who, it turned out, happened to be a master Chef by most any measure. His presentation, and creativity far surpassed my ability. I also noticed that even though he had a fine collection of knives, the longest prep knife he owned was 8″.

    After some time passed, I gave my Calphalon branded 10″ Chef knife as a house warming gift to him and his wife. I figured that my well used knife was visually perfect, and far sharper than a new copy. I would just order another one for myself later.

    Well, it was a big hit, as it has become the most often used knife in his kitchen. If you never tried a quality 10″ Cook’s knife before, you will be amazed at what it can deliver to your kitchen. The problem was that when I went to buy a replacement, I discovered that Calphalon no onger offers a 10″. Ouch….

    After trying the several models available from the other brands over time, it became clear to me that the Wusthof Grand Prix II 10″ knife was a winner. It has a great one piece molded handle that feels more comfortable in the hand than the competition, and a blade that is thin enough for delicate chores, while being tough enough to handle the rough work without complaint. The knife has “poise”, if that is possible.

    As a bonus, it’s fit and finish is right at the top of the knife makers art. I love it. If you are interested in breaking out of the standard 8″ limit, this is the way to go. I’d bet that you will agree with me after spending some time with this knife.

  5. I can’t top the other review, but IMO the knife deserves a 5/5. If the edge isn’t honed quite to the degree otherwise described, it’s inconsequential — all I know is that when I sliced a fresh tomato with this knife, the weight of the knife itself was nearly sufficient to cut through the tomato. At worst, when it needs professional sharpening have the bevel set to the desired pitch.

    And with a 10″ blade, the bolster is a minor concern. The first 9 1/2″ of blade will handle just about anything. ;)

    I like this knife so much, I bought another one as a gift.
